With the emulsion formed in the aqueous enzymatic extraction of the rapeseed oil as the object of study, the oil extraction rate as the index, centrifugation and the absolute ether extraction method were used to demulsify. Through the optimization of the orthogonal test, the optimal conditions were found to be: centrifugation speed 9000r/min, centrifugation time 30min, pH 5.0, absolute ether 70%. Under these conditions, the oil extraction rate was 98.05%.
